Day 101 – Crisp Noodle Pancake
Excellent as is or to accompany any stir fry dish.
Preparation time: 5 minutes – Cooking time: 15 minutes
Ingredients for 4 servings:
- 1 pound thin rice noodles
- 4 tablespoons vegetable oil
- 4 tablespoons soy sauce
- Salt and pepper
Directions:
- Bring a large saucepan of water to a boil. Add the noodles and cook for 2 minutes.
- Transfer to a colander and rinse thoroughly under cold water. Spread the noodles over a baking sheet and pat dry with a paper towel.
- Heat 2 tablespoons oil in a large skillet. Add the noodles in an even layer and press with a heavy lid. Cook on medium high until browned and crisp on the bottom, about 8 minutes. Invert the noodle pancake over the baking sheet.
- Add the remaining oil to the skillet and carefully slide the noodle pancake back into the skillet. Cook for another 5 minutes. Add the soy sauce evenly and cook for another minute.
